(Ingredients
- 3 Tablespoons Flax Meal
- 6 Tablespoons Water
- 1/2 Cup Almond or Peanut Butter (No Salt/No Sugar)
- 1 Cup Almond Milk
- 1 Tablespoon Vanilla Extract
- 1 Cup Gluten Free Flour or All Purpose Flour
- 1 Cup Organic Cane Sugar
- 2/3 Cup Dutch Processed Cocoa Powder
- 3/4 Teaspoon Baking Powder
- 1/2 Teaspoon Salt
For Cheesecake Batter:
- 1 (8oz) Bar SimplyV Plant-Based Cream Cheese
- 1/4 Cup Organic Sugar
- 1 Tablespoon Cornstarch
- 1/2 Tablespoon Lemon Juice
- 1/2 Tablespoon Vanilla Extract
- 1/2 Tablespoon Lemon Zest
Instructions
- Pre-heat oven to 350, brush 8x8 pan with melted vegan butter.
- In small bowl mix flax meal and water. Set aside for ten minutes.
- In a separate bowl, mix the above cheesecake batter together and set aside.
- In a medium size mixing bowl, mix thickened flax/water mix with all ingredients except cocoa powder and flour.
- Add in the cocoa powder and flour and mix thoroughly.
- Reserve 1/4 cup of the brownie batter for the swirl.
- Pour the remaining brownie batter into the buttered 8x8 pan. Spread evenly, now top with cheesecake batter and spread evenly.
- Take the remaining 1/4 cup of brownie batter and dollop drops on top of the cheesecake batter and swirl in with a knife.
- Place in 350 degree oven for 40 minutes.
- Cool and serve.
