Cheesecake Brownies

(Ingredients

  • 3 Tablespoons Flax Meal
  • 6 Tablespoons Water
  • 1/2 Cup Almond or Peanut Butter (No Salt/No Sugar)
  • 1 Cup Almond Milk
  • 1 Tablespoon Vanilla Extract
  • 1 Cup Gluten Free Flour or All Purpose Flour
  • 1 Cup Organic Cane Sugar
  • 2/3 Cup Dutch Processed Cocoa Powder
  • 3/4 Teaspoon Baking Powder
  • 1/2 Teaspoon Salt

For Cheesecake Batter:

  • 1 (8oz) Bar SimplyV Plant-Based Cream Cheese
  • 1/4 Cup Organic Sugar
  • 1 Tablespoon Cornstarch
  • 1/2 Tablespoon Lemon Juice
  • 1/2 Tablespoon Vanilla Extract
  • 1/2 Tablespoon Lemon Zest

Instructions

  1. Pre-heat oven to 350, brush 8x8 pan with melted vegan butter. 
  2. In small bowl mix flax meal and water. Set aside for ten minutes.  
  3. In a separate bowl, mix the above cheesecake batter together and set aside. 
  4. In a medium size mixing bowl, mix thickened flax/water mix with all ingredients except cocoa powder and flour. 
  5. Add in the cocoa powder and flour and mix thoroughly. 
  6. Reserve 1/4 cup of the brownie batter for the swirl.  
  7. Pour the remaining brownie batter into the buttered 8x8 pan. Spread evenly, now top with cheesecake batter and spread evenly.
  8. Take the remaining 1/4 cup of brownie batter and dollop drops on top of the cheesecake batter and swirl in with a knife. 
  9. Place in 350 degree oven for 40 minutes. 
  10. Cool and serve.
